Fall is the BEST SEASON! There’s nothing better than a mug of warm tea in the evening…well, nothing better than warm tea and APPLE COBBLER! But there are a lot of cobblers out there that are full of junk – here’s a recipe we developed to help you with enjoy this awesome fall dessert
My personal FAVORITE apple cobbler recipe – it’s awesome because there’s no added sugar, it’s easy to make, and the leftovers are really awesome with coffee for breakfast. This recipe should make cobbler for 4 people.
Filling:
- 2 large fuji apples – cored and diced
- 1/2 cup unsweetened apple sauce (the ingredient list should say “apples” and that’s it) – TRUST me when I say use applesauce! It’s what give the cobbler filling that “apple pie” texture.
- 1-2 tsp. Apple Pie Seasoning (I buy mine from Penzeys, but any combination of cinnamon, nutmeg, and other appropriate seasonings will work well)
Topping:
- 1/2 cup coconut flour (preferably sifted)
- 1/2 cup chopped nuts (I like pecans and Hazelnuts, but walnuts also work nicely)
- 1/2 cup shredded coconut
- 1/2 cup melted coconut oil/butter (adjust oil/butter ratio depending on taste preference)
- 2 beaten eggs
Directions:
- Preheat oven to 350 degrees (I hate nothing more than having something ready to go in the oven, then realize I didn’t turn it on – ugh).
- Combine apple pie season into apple sauce, then mix with chopped apples.
- Put apple mixture into an oven safe casserole dish.
- Combine dry topping ingredients.
- Mix dry ingredients with melted oil/butter combo.
- IMPORTANT!! Before mixing the beaten eggs into the rest of the topic mixture, make sure the mixture is cool to the touch (it may be warm from the melted oil). If you mix beaten eggs into a really warm mixture, you’ll partially cook the eggs. It looks creepy and will likely make your topping taste like it had egg parts in it.
- Topping should have a slightly crumbly texture to it – put it on top of your apple mixture – I like the little browned bits on top, so I would recommend not patting down the topping – just make sure it’s evenly distributed.
- Pop that baby in your preheated oven for 35 minutes.
- Remove, let cool, and ENJOY!
