Waking up New Year’s Day can sometimes be rough. I know you don’t want to wake up and try to find something around the house or hope something is open, so why not make something ahead of time?

I like frittatas – you can basically put anything that’s in your fridge in there and it will taste good. Here’s one of my “go to” versions that you can make before heading out the door in your sparkly dress NYE, then simply pop in the oven when you wake up the next morning. You can even pre-grind your coffee to get it ready for a seamless morning transition.

New Year Frittata (serves 4+)

10 eggs (I’m a fan of WHOLE eggs because if you’re a fairly healthy individual, there are a LOT of benefits in the yolk that you can’t get in the white part – you can read a little about it here)

1/3 lb sausage, or other meat if you like breakfast meat

1/2 bunch of kale – washed, chopped and massaged (I like kale, so I always add more)

1/3 onion – chopped

10 mushrooms – wiped off and diced

3-4 tablespoons paleo pistachio pesto (or regular if you don’t have paleo pesto on hand)

Let’s Make Some Food!!

Preheat Oven: 375

1) Sautee your breakfast meat in a large skillet until almost cooked thoroughly

2) add your onions and mushrooms and finish cooking

3) put kale in a medium size casserole dish

4) whip eggs together with pesto – add a little pepper to taste

5) put sautéed meat, mushrooms and onions on top of kale and cover with egg mixture

6) I like to mix thoroughly with my hands, but if that’s too gross for you, that’s ok too!

7) pop in the oven for approx 35 minutes, then check to see if the center is firm to the touch – if not, keep in the oven and keep an eye on it until the eggs finish cooking.

VOIALA! If you make this the night before, all you have to do is preheat the oven when you wake up and be ready for breakfast! And, you can pack it with as many veggies as you want, so you know you’re at least starting your day off with quality protein (eggs) and a ton of veggies.
